Concerning the choice of keeping Ubuntu 10.04, the reason is that I try to keep a stable system base to reduce the number of OS related problems. That's why I prefer to base CAELinux on LTS releases of Ubuntu. It is not 'top notch' but at least it should be rock solid.
For OpenFoam, I see that you prefer the official release (2.0.1 now) so I will include it. Anyway installing an alternate version is really easy as they are all available as Ubuntu packages in PPAs.

CAELinux is not very different from an Ubuntu base with added packages and some custom compiled codes. For OpenFoam, Elmer and Salome-Meca, you can get a very similar user experience by just installing them on your own distro. But Aster and Saturne are custom compiled, configured and make use of small wizards that I wrote. So for those two codes you won't get the same integration if you compile it with the default options. In a word the added value of CAELinux is a working integration of all those codes.
