I've had this problem with CAELinux 2010 as well. When installing CAELinux 2011 on a machine with two hdd Ubiquity crashes at the "creating user" phase of the installation. My setup is that I have one hdd for the root, opt, and swap and another hdd for home. I've solved this problem by following the directions in
this bug report.
I hope this can be helpful to users in the future who also run into problems.

Thanks a lot for the information.
Did you select the 'encrypt user directory' option when installing?
Because I have never experienced this problem and I would like to know if it only happens when encrypted home folder is requested...

Yes I did encrypt my home directory. Also I used a solid state drive for my root and opt drive while my home drive was a sata hard drive. That may play a role in the error.
